Gnudi with ricotta, spinach & truffles

Gnudi with ricotta, spinach and truffles is an easy-to-make, yet elegant Tuscan recipe. This dish is all about the ingredients - always make sure you use the freshest ricotta and truffles you can find.

Ingredients for 4 people

400 gr sheep ricotta cheese
2 eggs
600 gr spinach
60 gr 0 grade flour
200 gr butter
150 gr grated Parmigiano cheese
60 gr truffle
black pepper


Cook the spinach in water, drain and chop. In a bowl, combine the ricotta cheese with the spinach and parmigian, add salt and pepper as needed. Roll the mixture into little balls. In a frying pan, melt the butter and sage leaves, cook the gnudi balls in salted water and then add them to the pan with the butter and sage. Plate them up and garnish with black pepper and truffle shavings.
