Gnudi with ricotta and spinach

Gnudi is a Florentine creation made from spinach and sheep ricotta cheese with just a little flour. Once ready and cooked, these Tuscan dumplings are tossed into melted butter and sage leaves.

Ingredients for 4 people

400 gr sheep ricotta cheese
2 eggs
600 gr spinach
60 gr 0 grade flour
200 gr butter
150 gr grated Parmigian cheese
8 sage leaves
Black pepper


Cook the spinach in water, drain and chop. In a bowl, combine the ricotta cheese with the spinach and parmigian, add salt and pepper as needed. Roll the mixture into little balls. In a frying pan, melt the butter and sage leaves, cook the gnudi balls in salted water and then add them to the pan with the butter and sage. Plate them up and garnish with black pepper.
