Peposo Beef Stew from Impruneta

Peposo is a Tuscan beef stew that originated in Impruneta, a small town near Florence. The meat is slow-cooked in red wine (infused with a lot of black pepper) until fork-tender and deliciously peppery.

Ingredients for 4 people:

1 kg Beef Steak

12 garlic cloves

500 ml Red Wine

150ml Water

50 gr Tomato Paste

4 Potatoes

400 ml Extra Virgin Olive Oil

Black Pepper



Slice meat into chunks, place in a saucepan and add garlic cloves, ground pepper, red wine, tomato paste and water.

Cook in the oven at 160° C for 90 minutes

In the meantime, boil the potatoes in salted water then, peel and mash with olive oil.

Serve in a rustic bowl with the meat sauce poured over the mashed potato.
